CHICKEN PARMESAN MEATBALL

I've never cooked with ground chicken before but I wanted to change up some of our meals since it seems like we've been eating the same things week after week. Like many of us I don't like spending a lot of time in kitchen but I want something that is fresh and tastes good. I came across a recipe for chicken Parmesan meatballs and tweaked it slightly. I can't believe how good these turned out and how easy they were to make. I also tossed some frozen veggies in the microwave to round everything out. It made for a perfect Sunday night comfort meal on a chilly day. I hope you enjoy! 

INGREDIENTS 
1 lb.  Ground Chicken
1 Egg
1 Cup Marinara Sauce - or your favorite red sauce. 
1/2 Cup Italian bread crumbs
1/2 Cup Panko break crumbs
1/4 Cup Parmesan cheese, grated
4 oz. Mozzarella balls, mini fresh
1 tsp. Salt
1/2 tsp. Pepper
1 tsp. Oregano
1/2 tsp. Garlic powder 

INSTRUCTIONS
1. Mix panko bread crumbs and Italian bread crumbs in a small bowl. 
2. In a medium bowl, mix ground chicken with 1/2 cup of the bread and panko bread crumb mix, oregano, egg, salt and pepper
3. Roll meatballs into two tablespoon size balls. 
4. Roll meatballs in the other 1/2 cup of bread crumb mix. 
5. Heat skillet over medium heat and add a tablespoon of olive oil. Add meatball, turning them as they cook. 
6. Cook meatballs until golden brown. 
7. Add marinara sauce to the pan along with grated Parmesan cheese and mozzarella cheese. 
8. Turn temperature to low, cook until sauce is hot and cheese is melted.
